When does mayonnaise expire?
Unopened mayonnaise can last up to 3-4 months after the 'Best By' date printed on the package, if it's stored in a cool, dry place. Once opened, if kept in the refrigerator, it can be safe for consumption for up to two months. If it's homemade, it doesn't have any preservatives so it should be consumed within 1 week of preparation. Freezing mayonnaise is not recommended as it could cause separation of ingredients and a change in texture.
How do you tell if mayonnaise is bad?
To check if mayonnaise has gone bad, first, take a look at its appearance. If it has changed color or consistency, or if there are visible signs of mold, it's time to toss it. It may also separate or become clumpy, which is a sign it's past its prime. Another clear sign is the smell. Mayonnaise should have a light, tangy aroma. But if it starts to smell sour or somewhat like rotten eggs, it's certainly gone bad. Lastly, if by any chance you have tasted it and it has a bitter or off-putting flavor, throw it away. But in general, always remember: when in doubt, toss it out.
Tips for storing mayonnaise to extend shelf life
• Always store your mayonnaise in the fridge once opened, even if the label doesn't explicitly say so.
• Try to use a clean, dry utensil when scooping mayonnaise out of the jar. This will prevent bacteria or other contaminants from entering the jar.
• Do not let mayonnaise sit out at room temperature for more than two hours. If it does remain out for longer, it's safer to throw it away as harmful bacteria could have grown.
• The back of the fridge is usually the coldest part, so try and store your opened mayonnaise there. This will keep it chilly and slow down the spoiling process.
