When does olive oil mayonnaise expire?
An unopened jar of olive oil mayonnaise can still be safe to use for about a month beyond the 'best by' date printed on the package when stored in a cool and dark place such as a pantry. Once opened, it should be used within 1-2 months if refrigerated appropriately. Allowing the mayonnaise to come in contact with other food items, or double dipping a spoon or knife can result in quicker spoilage. Freezing is not recommend for olive oil mayonnaise as it will cause the mayonnaise to separate and become unusable.
How do you tell if olive oil mayonnaise is bad?
Check for an off smell first. If it smells like soured olive oil or has a sharp, pungent smell, it's likely gone bad. The color of mayonnaise can also indicate if it's gone bad. Any discoloration or if it has darkened in color, it's time to discard it. If there's any visible mold or changes in texture such as it becoming curdled or lumpy, it's definitely spoiled and should not be consumed.
Tips for storing olive oil mayonnaise to extend shelf life
• Always keep the olive oil mayonnaise refrigerated, even before it is opened. This will extend its shelf life.
• Use a clean utensil every time you scoop out the mayonnaise to prevent bacterial contamination.
• Store it on the refrigerator shelf rather than in the door to keep it at a consistent temperature.
• Do not return unused mayonnaise back to the jar. This can introduce bacteria and deteriorate the quality faster.
