When does honey expire?
Honey is pretty unique, it is one of the only foods that never spoils! With proper storage, it can last indefinitely. However, it does tend to crystallize over time, but don't worry, it's still perfectly edible. A jar of honey can last years past the 'best by' or expiration date, if there is even one printed on the package. Once the bottle is opened, it still won't spoil, but you might need to watch for crystallization more carefully. If you've got a jar of homemade honey, the rules still apply- it's good until you see or taste something off-putting.
How do you tell if honey is bad?
Despite its longevity, honey can still undergo changes that may make it less appealing. Crystallization is a common occurrence where the honey becomes solidified and grainy over time, but this doesn't mean it's bad. Simply warming the honey can bring it back to liquid form. As honey absorbs moisture from the air, an opened jar may ferment and produce a sour, off smell, or foaming or fizzing when opened, but this is extremely rare. In that case, it's probably best not to consume it.
Tips for storing honey to extend shelf life
• Keep it in a sealed jar at room temperature in a dry pantry.
• Avoid storing honey in the refrigerator as it encourages crystallization.
• If it crystallizes, place the jar in warm water and stir until the crystals dissolve.
• Don't add spoons or any utensils with water on them into the honey jar, because adding moisture can cause it to spoil.
• Honey can be frozen, though it's not usually necessary due to its long shelf life. If desired, to defrost, simply leave it out at room temperature or place in warm water.
