When does fresh ginger expire?
When unpeeled and stored in the refrigerator, fresh ginger usually stays good for about 4-6 weeks. However, it can last up to 2 months or possibly longer if it is wet, fresh and stored properly. Once peeled or cut, its shelf life decreases and it will start to go bad after about a week. If you love this aromatic root and find it hard to quickly use it up, you can grate it and store in the freezer in an airtight container or ziplock bag, where it will keep it's flavor for about 6 months.
How do you tell if fresh ginger is bad?
Spoiled ginger is easy to spot. If it feels slimy or has mold growing, it's time to toss it. If the flesh has become darker in color or the aroma has noticeably faded, these are also signs that your ginger is past its prime. Another sign of decay is presence of a blueish substance in the center of the root, which is called 'blue-ring'. Just remember, when in doubt, throw it out!
Tips for storing fresh ginger to extend shelf life
• Store unpeeled fresh ginger in a resealable plastic bag, with the air pushed out, in the crisper drawer of the refrigerator. This keeps it fresh much longer.
• For even longer storage, freeze the ginger. No need to peel it first. When you're ready to use it, just grate the amount you need - on a microplane, the peel will get left behind and you'll be grating the juicy, flavorful part.
• Cut larger amounts into small chunks or coins and freeze them into 'ginger cubes' using an ice cube tray.
• Make sure the ginger is dry before you put it in the fridge or freezer. Water will speed up the decaying process.
• You can also submerge peeled fresh ginger in alcohol, like vodka or sherry, or in a jar of sherry vinegar, and then refrigerate. The ginger will stay fresh and flavorful for up to several months. Bonus: You'll also have a small amount of ginger-flavored liquid for your recipes!
