Set Instant Pot to SAUTE and drizzle with oil.

Add chopped bacon and cook for 3-4 minutes or until cooked through. Use a slotted spoon to transfer bacon to a paper towel-lined plate and set aside.

Sear beef in the Instant Pot for 3-4 minutes, using tongs to rotate and brown all sides. Add red wine to the pot, scraping any brown bits off the bottom and sides of the pot into the liquid. Simmer and reduce for about 5 minutes.

Gradually add beef broth, tomato sauce and flour to the pot, whisking constantly to prevent lumps.

Stir in cooked bacon, carrots, onions, garlic, thyme, baby potatoes, mushrooms, salt, and pepper. Cover and set to PRESSURE COOK or MANUAL for 45 minutes.

Allow a natural release for 10 minutes, then switch the valve to VENT and perform a quick release.

Once the float valve drops, remove the lid and set the Instant Pot to SAUTE. Let the sauce thicken for 5-10 minutes before giving the dish a final stir.

Taste the bourguignon and adjust the salt and pepper as needed. Garnish with chopped parsley before serving.
