In another bowl, combine 4 tablespoons low sodium soy sauce, rice vinegar, and pure maple syrup.

Heat a large, deep skillet with a tight-fitting lid over medium-high heat. Add 1 tablespoon extra virgin olive oil.

Once hot, add the ground chicken. Cook, breaking up the meat, and cook until fully cooked through, about 5 minutes. Transfer to a plate or bowl.

Add the remaining 1 tablespoon olive oil to the skillet, and add the sliced cabbage and shredded carrots. Cook for 2 minutes, stirring occasionally, until the cabbage begins to wilt.

Add the soy sauce and spice mixture, and stir well. Cover the skillet and cook over high heat for 1 minute, until the cabbage is wilted but still has a crisp texture.

Uncover and add the chopped green onions, chopped cilantro, and cooked chicken to the skillet. Cook for another 30 seconds, stirring to combine.
