Enjoy a comforting bowl of pasta tossed in a hearty and flavoursome ground turkey and lentil Bolognese. Not only is it light and savoury, but it provides a nutritious twist on a classic, perfect for weeknight dinners and fantastic for leftovers the next day.
Boil a large pot of salted water and cook the pasta as per its package instructions. When cooked, drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they are slightly softened.

Add the ground turkey to the skillet, breaking it into crumbles as it cooks. Cook until it is no longer pink.

Stir in the rinsed lentils, diced tomatoes, tomato sauce, and Italian seasoning.

Increase the heat until the mixture starts to simmer. Then, reduce the heat to medium-low, cover the skillet, and let it simmer for about 15 minutes, or until the lentils are cooked.

Add the finely chopped fresh basil, season with salt and pepper, and stir the mixture well. Let it simmer for a few more minutes to let the flavours meld together.
