Preheat your oven to 180°C (355°F). Also, preheat a grill or grill pan over medium heat.

Wash and pat dry the cherry tomatoes. Pierce the whole tomatoes with the tip of a sharp knife to prevent them from exploding in the oven.

Place the tomatoes in a medium-sized bowl. Add the minced garlic, extra virgin olive oil, honey, dried oregano, and flake sea salt, mixing until the tomatoes are well coated.

Spread the tomatoes on a rimmed baking tray, and roast in the preheated oven for about 30 minutes, or until they begin to caramelize. Remove the tray from the oven and let it cool.
