Preheat your oven to 425 degrees F. On a large baking sheet, toss the sweet potatoes with the olive oil, salt, pepper, onion powder and smoked paprika. Roast for 20 minutes, then stir and roast for another 10 minutes, or until golden and tender.

While the sweet potatoes are roasting, cook the bacon in a skillet until crispy. Remove and set aside on paper towel.

In the last 5 minutes of the sweet potatoes roasting time, add the chopped walnuts to the tray and roast until they are lightly toasted.
VINAIGRETTE

Combine lime juice, lime zest, honey, balsamic vinegar, garlic and red pepper flakes in a blender. Blend on low and slowly add in the olive oil until the dressing is emulsified and smooth.
SALAD
