When does fresh mozzarella expire?
For an unopened package of fresh mozzarella, you can expect it to last 1-2 weeks past the printed sell-by date if refrigerated. Once the package is opened, this cheese needs to be used within 1 week. If you choose to freeze fresh mozzarella, it can extend its lifespan to about 2 months. However, be aware that freezing will alter the texture of the cheese, making it crumbly and less elastic upon thawing. It's best used for cooking or melting in dishes once thawed.
How do you tell if fresh mozzarella is bad?
To determine if fresh mozzarella has gone bad, you'd want to check for a few telling signs. First, look at the color and visual appearance. Fresh mozzarella should be a bright and clean white. If it appears yellowish or discolored, that's a sign it's no longer good. Another telling factor is the smell - bad mozzarella will give off a sour or spoiled milk odor. Lastly, if you touch the cheese and it feels slimy, it's best to discard it. When in doubt, it's always safer to throw it out!
Tips for storing fresh mozzarella to extend shelf life
• Always store fresh mozzarella in the fridge, preferably in the vegetable drawer which tends to have a consistent temperature.
• If the original packaging doesn't reseal well after opening, transfer the cheese to a resealable plastic bag or a container with a tight lid.
• If your fresh mozzarella is in liquid (brine), keep it submerged in that liquid until it's used. The brine helps keep the mozzarella moist and extends its fridge life.
• To freeze fresh mozzarella, wrap it tightly in plastic wrap and then place in a freezer-safe bag. Remember to defrost it in the fridge overnight before use to prevent sudden temperature changes.
