Once the flax seeds and water have combined to create a 'flax egg', add the coconut sugar, cooled coconut oil, and vanilla extract. Whisk the ingredients together until they are smooth and well combined.

Next, introduce the oat flour, rolled oats, brewer's yeast, baking soda, cinnamon and fine sea salt into the mixture. Continue to mix until the dough uniform and well combined.

Fold in the dairy-free dark chocolate chips to the dough.

Using a cookie scoop, place rounded portions of dough onto the prepared baking sheet, ensuring they are evenly spaced about 2 inches apart.

Bake the cookies for around 10-13 minutes until the edges turn slightly golden brown.
