When does vanilla extract expire?
Vanilla extract, particularly pure vanilla extract, is known for its long shelf life. If unopened, a bottle of this ingredient can last indefinitely as the alcohol used in its production acts as a natural preservative. Once opened, it will stay fresh for roughly five years, even after its 'best by' date. For homemade vanilla extract, this is harder to determine and so to be safe it's better to use up within five years too. Freezing is not recommended as extreme temperatures might ruin the flavor.
