When it comes to smell, fresh parmesan has a cheesy, slightly milky aroma, while expired cheese smells like sour milk. Tips for storing shredded parmesan cheese to extend shelf life
• Keep the cheese in the refrigerator, ideally at temperatures between 35 and 40 degrees Fahrenheit.
• Always store it in an airtight container or wrapped tightly in plastic wrap to prevent air from drying it out.
• To extend its shelf life, consider freezing the shredded cheese. Place it in freezer-safe bags, push out as much air as possible and seal tightly before placing it inside the freezer.
• It’s always best to store cheese separately from other foods in order to avoid cross-contamination and absorption of other flavors.
• If you notice a small spot of mold, you may cut off at least an inch around and below the mold spot. The rest should still be good to use. However, be sure not to contaminate the knife.
