Set your Instant Pot to the sauté function. As it heats up, add the canola oil.

Once the oil is hot, add the bite-sized pieces of chicken to the pot, seasoning them with salt and pepper. Brown the chicken pieces on all sides for about 3 minutes total.

Pour in the chicken broth, making sure to scrape the bottom of the pot with a hard metal spoon to dislodge any bits stuck to the pot.

Add the minced garlic, dried parsley and Bowtie pasta in the pot. Don't stir the pasta -- just press it down into the liquid with a spatula.

Secure the lid on the Instant Pot, setting the valve to sealing mode. Select the Manual or Pressure Cook option for 3 minutes.

Once the timer goes off, do a quick release of the pot by switching the valve to vent.

Switch the Instant Pot back to sauté mode. Stir in the cream cheese, mozzarella cheese, and Parmesan cheese.

In a small bowl, combine the water and cornstarch to form a slurry, and stir this into the pasta. Keep stirring until the sauce thickens, and all the cheese has melted into a smooth consistency.
