When does secret sauce expire?
Generally, most secret sauces, particularly those based on mayonnaise, should be used within two weeks if refrigerated consistently. This is because mayonnaise and similar condiments are perishable and tend to harbor bacteria if used beyond this timeframe. In case you have store-bought sauce, it’s best to consume within six months if unopened and follow the 'use by' date on the package. Yet, once opened, it is usually good for about one to two months in the refrigerator, depending on specific ingredients used. Homemade varieties, on the other hand, should be consumed much earlier due to the absence of preservatives.
As for freezing, while technically possible, fluid separation and texture changes upon defrosting make it suitable for only specific types of secret sauces (those without dairy and mayo). It could be frozen for up to six months. To defrost, simply move to the refrigerator overnight.
How do you tell if secret sauce is bad?
Sauces spoil for the same reasons other foods do: the growth of microorganisms, including molds and yeasts. A pungent, off-smell is usually the first sign that your secret sauce is no longer good. Discoloration or spots of mold are also common signs of spoilage. Additionally, if your sauce has been sitting out of the refrigerator for more than two hours, it's best to throw it away. The danger zone of temperature for bacteria growth is 40°F - 140°F. Remember, when in doubt, it’s always safest to throw it out.
