Arrange the Sous Vide water bath and set the temperature to 135 degrees F.

In a durable bag suitable for sous vide cooking, add the Ribeye Steaks, 2 tablespoons of Ghee, fresh Rosemary, fresh Thyme, and Celtic Sea Salt. Seal the bag using the water displacement technique or a vacuum sealer. The bag should submerge completely in the water bath.

Cook sous vide for 2 hours.
MUSHROOM CAULIFLOWER RISOTTO

Steam the Cauliflower rice until it's tender.

In a pan heated to medium, add 2 tablespoons of Ghee. Add the chopped Baby Bella Mushrooms and cook until they start to brown.

Add the steamed cauliflower rice to the pan. Season with Salt and freshly ground black pepper. Cook until the cauliflower begins to brown at the edges. Keep it warm.

After 2 hours, remove the steaks from the water bath. Heat a cast iron pan over medium-high heat with remaining Ghee.

Remove the steaks from the bags and season with additional Celtic Sea Salt and freshly ground black pepper on both sides.

Sear the steaks in the hot pan for 30 seconds on each side to form a desirable crust. Carve immediately and serve accompanied by the Mushroom Cauliflower Risotto.
