Combine the coarse ground coffee, salt, black pepper, garlic powder, and dried onion powder together in a bowl.

Rub this spice mixture over the ribeye steaks, ensuring all areas including the sides are well-coated.

Add vegetable oil to the preheated cast-iron skillet, evenly coating the bottom.

Place the ribeye steaks into the skillet and let them sear uninterrupted for about 5 minutes.

Turn the steaks, add butter and thyme, and spoon the melting butter over the steak continuously for another 5 minutes or until steak reaches desired doneness.

Upon reaching your ideal degree of doneness, remove the steaks from the skillet and let them rest for about 10 minutes.

While the steaks are resting, mix the Brussels sprouts with olive oil and steak seasoning on a baking sheet and make sure they are evenly coated.
