Juicy, perfectly cooked ribeye steaks are simpler to make at home than you might think. This recipe uses a combination of oven and pan searing to ensure a tender, flavorful steak every time.
Preheat oven to 275°F. At the same time, let your ribeye steaks sit at room temperature, which ensures more even cooking.
COOKING

Pat the steaks dry with a paper towel. Drizzle a tablespoon of extra-virgin olive oil over them, and rub it in using your hands.
SEASONING

Sprinkle the steaks evenly with kosher salt and freshly ground black pepper.
OVEN

Place the steaks on a wire rack set on a rimmed baking sheet and place in the oven. Cook until the steaks reach an internal temperature of 95°F.
STEAKS

Heat a tablespoon of olive oil in a heavy skillet or cast-iron pan over high heat. Once the oil is hot, add the steaks.
PAN

Sear the steaks for about 2 minutes on each side until the instant-read thermometer inserted into the center of a steak registers 130°F for medium-rare.

Remove the steaks from the pan and let them rest on a cutting board for 10 minutes to allow the juices to redistribute throughout the steak.
