On your Instant Pot, select SAUTE setting, add the sesame oil and let it heat up.

Add the seasoned chicken cubes into the pot and sauté until they turn white.

In the meantime, whisk together the chicken broth, honey, soy sauce, and apple cider vinegar in a bowl.

Pour in the broth mixture and the minced garlic into the pot, ensuring the chicken is evenly coated.

Secure the Instant Pot lid and set it to PRESSURE COOK or MANUAL mode on high for 8 minutes.

While the chicken is cooking, whisk the cornflour and cold water in a separate bowl to create a smooth thickening agent, set aside.

Once cooking time is up, allow for natural pressure release for 10 minutes, then quickly release the remaining pressure.

Carefully remove the lid, stir in the cornflour-water thickening agent, and then switch the Instant Pot to SAUTE mode again. Stir constantly until the sauce thickens, around 2-3 minutes.

While the sauce is thickening, cook the jasmine rice in the microwave according to the packet instructions.
