Heat canola oil in a wide, deep pan over medium heat.

Add the cubed chicken breasts and season with salt and pepper. Cook until lightly browned, take care not to cook it thoroughly.

Remove the chicken from the pan and set it aside.

In the same pan, melt the butter and add the chopped onions and minced garlic. Cook until they are softened.

Next, add the sliced mushrooms to the pan and continue to cook until they are also softened.

Pour in the white wine, bringing it to a boil while scraping off any browned bits from the bottom of the pan with a spoon.

Add 2 1/2 cups of the chicken broth to the pan and bring to a boil.

Now, add the egg noodles, browned chicken, and dried parsley into the pan. Stir to combine everything.

Reduce the heat to low, cover the pan, and let it simmer for about 10 minutes or until the noodles are al dente and the chicken is fully cooked.

In a separate bowl, whisk together the remaining 1/2 cup chicken broth and flour until smooth.

Pour this into the pan, stirring well to prevent lumps and to allow the sauce to slightly thicken.

Lastly, add the sour cream into the pan, stirring to distribute evenly. Add additional salt and pepper to taste, if needed.
