A palate-pleasing stir-fry that's healthier and full of flavor! Firm tofu prepared in the air-fryer pairs beautifully with a medley of vibrant vegetables. All tossed in a savory soy-honey-ginger sauce, this dish is an exciting yet easy weeknight dinner served over steaming hot brown rice.
In a large bowl, combine 1 tablespoon of the soy sauce and the sesame oil. Add the tofu and toss gently to coat.

Sprinkle the tofu with cornstarch and toss gently to coat.

Lightly coat the air-fryer basket with cooking spray. Place the tofu in the prepared basket and cook for 20 minutes, or until golden and crispy.

While the tofu is cooking, in the same large bowl toss the onion, sweet pepper, and pea pods with cooking spray. Halfway through the tofu cooking time, add the vegetables to the air fryer basket and continue cooking until vegetables are crisp-tender.

Meanwhile, prepare the sauce. In a small saucepan, combine the remaining 5 tablespoons of soy sauce, rice vinegar, honey, grated ginger, and crushed red pepper. Bring to a boil, reduce heat and simmer for 5 minutes, or until reduced to 1/2 cup.

Toss the crisped tofu and cooked vegetables in the reduced sauce. Serve the tofu-veggie mix over hot cooked brown rice.
