In a large bowl, combine minced garlic, chopped rosemary, crushed red chili flakes, chopped oregano, lemon zest, fresh lemon juice, and red wine vinegar.

Slowly add extra-virgin olive oil to the herb and citrus mix, whisking continuously until well blended.

MARINATING

Toss the zucchini and summer squash cubes in the prepared marinade. Make sure all pieces are coated evenly.
