When does pancetta expire?
Unopened pancetta can last in your fridge for up to three weeks past its printed expiry date, as long as it's kept at the correct temperature (below 40°F). Once it's been opened, it should be used within a week to ensure its freshness. If you have extra pancetta and you're worried you won't use it in time, you can freeze it! Freezing pancetta can extend its life for about two to three months. Keep in mind though, once it's defrosted, use it as soon as you can.
How do you tell if pancetta is bad?
If pancetta has gone bad, you'll notice a few tell-tale signs. The first and most obvious one is a change in color. The red meat will start to darken, and the fat may become yellowish – a definite sign that it's past its prime. Don't brave the smell if it's visibly off, but if it looks okay, give it a sniff. If it smells sour, rancid, or just plain bad, trust your nose and toss it out. Finally, if the pancetta feels slimy or sticky to the touch, it's also a sign that it has gone bad.
Tips for storing pancetta to extend shelf life
• Always store pancetta in the refrigerator to uphold its quality. Make sure your fridge temperature is below 40°F.
• To extend the shelf-life of pancetta, consider freezing it. Make sure to wrap it tightly in plastic wrap and then foil before storing it in the freezer.
• If storing cut pancetta, keep it covered in the fridge to prevent it from drying out.
• Always defrost frozen pancetta in the refrigerator. This helps maintain the quality and prevent bacterial growth that can occur from defrosting at room temperature.
