Place tomatoes and cherry tomatoes in a colander set over a bowl, season with 2 teaspoons kosher salt, and toss to coat
2
Set aside at room temperature to drain while you toast the bread, for at least 15 minutes, tossing occasionally
3
Preheat the oven to 350°F and adjust the rack to the center position
4
In a large bowl, toss bread cubes with 2 tablespoons olive oil, then transfer to a rimmed baking sheet
5
Bake bread cubes until crisp and firm but not browned, about 15 minutes, then remove from oven and let cool
6
Remove the colander with tomatoes from the bowl with the drained tomato juice
7
Place colander with tomatoes in the sink
8
Add shallot, garlic, mustard, and white wine vinegar to the bowl with the tomato juice, and whisking constantly, drizzle in the remaining 8 tablespoons of olive oil
9
Season dressing to taste with salt and freshly ground black pepper
10
Combine toasted bread, tomatoes, cucumber, and dressing in a large bowl, then add basil leaves
11
Toss everything to coat and season with additional salt and pepper if needed
12
Let the salad rest for 30 minutes before serving, tossing occasionally until dressing is completely absorbed by the bread
