In a large bowl, combine the salmon cubes, olive oil, minced garlic, Herbes de Provence, sea salt, and black pepper, and juice from one lemon. Gently stir to ensure all salmon pieces are coated in marinade.

Cover the bowl with a cling wrap and allow to marinate in the refrigerator for at least 30 minutes.

Prepare the skewers by threading a piece of marinated salmon, followed by a slice of zucchini, a grape tomato, and a piece of red onion. Repeat until the skewer is filled and finish off with a slice of lemon. Prepare all skewers in this manner.
COOKING

Preheat the grill to 350 degrees F. Lightly grease the grill grates with cooking spray. Place the assembled skewers on the hot grill.
