Fill a large pot with water, add salt and bring it to a boil. Add the Penne pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining. Set drained pasta aside.

In a large deep pan, melt the unsalted butter on medium heat. Add the chopped yellow onion and minced garlic cloves. Sauté them until the onion becomes translucent.

Add the red pepper flakes, fresh cherry tomatoes, and tomato paste to the pan. Stir well and let the mixture simmer until the tomatoes become soft.

Pour the vodka into the pan, followed by the sugar and salt. Let it simmer for 10 minutes on medium heat until the sauce reduces.

Pour the heavy cream into the pan and let the sauce simmer for another 3 minutes.

Add the cooked pasta to the pan with the sauce. Toss well and add some of the reserved pasta water if the sauce is too thick.
