Begin by preparing the chili-mayo sauce. Combine mayonnaise, lime juice and 2 teaspoons chili-garlic sauce in a bowl. Season with a pinch of salt. Whisk until smooth, then cover and chill in the fridge until ready to use.
PORK FILLING

In a large pan, heat the sesame oil over medium-high heat. Add mushrooms and the white parts of green onions. Sauté until the mushrooms soften, about 3-4 minutes.

Push veggies to the edges of the pan and add pork to the center. Break the pork up as you cook until it's mostly browned, about 3-5 minutes. Add in ginger and garlic and continue to cook until pork is no longer pink, about 2-3 minutes.
SAUCE

In a separate bowl, whisk together cornstarch and soy sauce until smooth, then add in chicken broth, hoisin sauce, and the remaining chili-garlic sauce. Stir until smooth.
PORK FILLING

To the pork, add in the coleslaw mix and shredded carrots. Stir before adding in the soy sauce mixture. Cook until the sauce thickens and the veggies are tender, about 2-3 more minutes. Remove from heat, stir in the green onion tops.
ASSEMBLY

Warm tortillas as per package instructions. Fill each tortilla with the pork and veggies mixture, drizzle with the chili-mayo sauce. Garnish with fresh cilantro, lime wedges, and a sprinkle of sesame seeds. Serve and enjoy!
