In a bowl, mix the ground beef with 1 tsp sea salt, 1/4 tsp black pepper and half the garlic powder. Then, form the mixture into 3-4 round patties.

In a large pan, heat 2 tbsp avocado oil over medium heat, and cook the patties for 4-5 minutes on each side, or until the internal temperature reaches 160 F. Remove the patties from the pan and set aside.

Using the same pan, heat the remaining 1 tbsp avocado oil and sauté the thinly sliced onion for 5-6 minutes, or until they soften.

Add the sliced mushrooms to the pan and cook for another 3-4 minutes, or until tender.

Pour in the beef broth, coconut aminos, mustard, apple cider vinegar, dried thyme, remaining sea salt, black pepper, and the rest of the garlic powder. Stir to combine all the ingredients.

In a small bowl, combine arrowroot starch and a tablespoon of water, then whisk the mixture into the pan with the gravy, allowing it to thicken for 2-3 minutes over reduced heat.
