In a large microwaveable bowl, add the smooth peanut butter and honey, and heat in 20-second intervals until the peanut butter is runny and can be combined easily with the honey.

Add the rolled oats and fold in until incorporated.

Press the mixture firmly into the prepared pan.

Cover and refrigerate for at least 1 - 2 hours before removing and cutting into bars.

If desired, melt the semi-sweet chocolate chips and coconut oil together in a microwave-safe bowl or using a double boiler. Drizzle or spread the melted chocolate over the bars before cutting them.
