Preheat the oven to 400 degrees and lightly spray the bottom of two 12-cup muffins tins with non-stick spray.

In a mixing bowl, combine the melted coconut oil, cinnamon, and sugar.

Cut out 3-inch rounds from the flour tortilla shells using a biscuit or round cookie cutter.

Coat the rounds thoroughly in the cinnamon sugar mixture.

Nestle the coated rounds between the crevices of the upside-down muffin tin and bake the shells in the oven for 6 minutes.

Allow the baked shells to cool completely before carefully removing from the muffin tin.

In a medium bowl, mix the diced apples, apple syrup, sugar and cinnamon.

Over medium heat in a skillet, melt coconut oil and add the apple mixture. Sauté for about 7 minutes until the apples are soft. Let the mixture cool.

Fill each taco shell with the cooled apple filling.
