Pat cod fillets thoroughly dry using a paper towel.

Rub each side of the fish with a teaspoon of olive oil. Then, brush the top of each fillet with honey.

Coat both sides of the cod fillets with the blackening seasoning mix, shaking off any excess.

In a large heavy-bottomed or cast-iron skillet, heat the remaining olive oil over medium-high heat.
