When does seedless cucumber expire?
An unopened seedless cucumber can last about a week in the refrigerator, possibly a bit longer if it was very fresh when you bought it. Once it's been cut open, the exposed flesh will begin to dry out and it typically lasts only 2-3 days in the fridge. If you decide to freeze your cucumber (which is rare and not typically recommended due to texture changes), you'll have about a year before the quality really starts to decrease, but remember it will be best used in a blended recipe like cucumber soup because the texture will be drastically different.
How do you tell if seedless cucumber is bad?
A bad cucumber is easily identifiable - the firm green flesh of a fresh cucumber will begin to get mushy and the color will start to turn a dull, yellowish-brown when it is going bad. You may also notice a somewhat sour smell, especially near the ends of the cucumber, when it is beginning to spoil. If you see any mold, you should definitely discard the cucumber.
Tips for storing seedless cucumber to extend shelf life
• Keep your cucumber in the crisper drawer of your fridge to maintain freshness longer. It loves cold temperatures and high humidity.
• Once a cucumber has been sliced, wrap the cut end tightly in plastic wrap or place it in an air-tight container to help it last a few days longer.
• If you are trying to use cucumbers from a large harvest or you simply have too many, consider pickling them - it's a great way to extend their shelf life and they make a delicious snack or sandwich addition.
