In a small bowl, combine the labneh, chopped fresh parsley, chopped fresh dill, chopped fresh basil and kosher salt. Mix well.

Drizzle in the extra virgin olive oil into the labneh mixture and stir until well incorporated.

Lay the bread slices flat on a cutting board or clean counter and spread one side of each slice with a generous spoonful of the labneh mixture.

Arrange the thinly sliced cucumber on four of the bread slices, making sure to overlap the cucumbers to make it fit well.

Top the cucumber covered bread slices with the remaining bread slices.

Cut each sandwich into four quarters. You now have 16 cucumber sandwiches.
