Expiration & Storage Tips
When does dashi expire?
Unopened dashi powder or granules are likely to have a shelf-life of up to two years if stored correctly. However, you should always check the Best Before date on the packaging. Once you've opened the package, it's best to use it within a few months, or the quality and flavor may begin to diminish. Prepared dashi stock -- when homemade -- will typically last only 1-2 days in the refrigerator due to the natural elements used in its preparation. If you've frozen your dashi, you can expect it to keep for about a month, with some minor loss of flavor complexity.
How do you tell if dashi is bad?
To determine if your dashi has gone bad, first give it a sniff. Dashi has a flavorful and inviting scent. If it smells off, sour, or unpleasant, it's time to toss it. Next, look at its color. Dashi should be a clear, light yellow or golden color. If it's cloudy, has a strange color, or you see mold, discard it. For dashi powder or granules, do a visual check for clumps. If there are, it likely means moisture has gotten into the package and it may not be good anymore.
Tips for storing dashi to extend shelf life
• Always seal the packaging of dashi powder or granules tightly after each use to keep moisture out.
• When storing homemade dashi, keep it in the refrigerator and use within a day or two for optimal flavor freshness.
• Portion and freeze any unused dashi into ice cube trays. Once frozen, transfer them into a freezer-safe bag or container. This method allows for easy measuring and avoids thawing more than required.
• Store your unopened dashi powder or granular packets in a cool, dry place, away from direct sunlight.
