In a large skillet, heat the canola oil over medium-high heat. Add the sliced yellow onions and cook for about 10 minutes, stirring regularly until they become translucent and slightly caramelized.

Add the thinly sliced sirloin steak and granulated sugar to the skillet, stir to combine and cook until the steak is lightly browned.

To the skillet, add the mirin, soy sauce, dashi stock, grated ginger and minced garlic. Stir to combine and bring the mixture to a simmer. Let it cook for about 15 minutes to allow the stock to reduce into a robust sauce.

Push the ingredients to the side of the pan to make space for the eggs. Crack the eggs into the pan and cook sunny-side-up until the whites have set but yolks remain runny.

Taste the beef mixture for seasoning, add a bit more soy sauce if needed.

To serve, divide the cooked jasmine rice among four bowls. Top each with an equal portion of the beef mixture and one sunny-side egg. Garnish with sliced scallion and toasted sesame seeds.
