When does miso paste expire?
Miso paste is pretty hardy in term of longevity. When unopened and kept in a cool, dark place it can stay good for a year past the expiration date on the package. Once opened, miso paste remains good for up to a year when stored properly in the refrigerator. Its high salt content acts as a natural preservative. It's also safe to freeze miso paste. While this can extend its life indefinitely, it's recommended to use it within a year for the best flavor. To defrost, simply transfer to the fridge a day before you plan to use it.
How do you tell if miso paste is bad?
Miso paste has gone bad if it develops an off smell or if there's visible mould. Also, if the color has significantly darkened over time, it's a possible sign that the ingredient has expired. While miso paste naturally darkens over time, a drastic change, particularly to a significantly deeper brown, can be a warning sign. As with any food, when in doubt, throw it out!
Tips for storing miso paste to extend shelf life
• Keep miso paste in the fridge once opened.
• For longer preservation, consider portioning and freezing it. You can spoon individual portions into an ice cube tray, freeze them, and then transfer the cubes to a freezer-safe bag. This way, you can defrost the exact amount you need.
• Always use a clean utensilon when dipping into the paste to avoid introducing bacteria.
• If you intend to use it sparingly, consider buying a light, sweet miso with a lower sodium content. These varieties tend not to last as long, but you'll potentially waste less if only using occasionally.
