When does mustard seeds expire?
Generally, mustard seeds are at their best quality within 2-3 years of purchase, whether unopened or opened, provided they're stored properly. However, they do not really expire or spoil, but over time lose their flavor and potency -- they're practically good indefinitely past that. If frozen, they can keep their flavor for even longer, up to 4 years.
How do you tell if mustard seeds is bad?
If your mustard seeds have been around for a while, check for changes in color, appearance, smell and taste. If they appear dull, they've likely lost their potency. Similarly, if they've lost their distinct pungent and sharp aroma or taste, it's likely time to replace them. Although rare, if the seeds develop mold or a strange odor, this could be a sign of contamination and they should be discarded instantly.
Tips for storing mustard seeds to extend shelf life
• Store your mustard seeds in a cool, dark and dry place. A pantry or a dark cabinet away from the heat of the stove, oven, or dishwasher is ideal.
• Use a sealable jar or container to keep them. Oxygen exposure can hasten the loss of their flavor and aroma.
• If you plan on using the seeds after a couple of years, consider freezing them. They freeze well and this can help them retain their flavor and potency for longer.
• Whenever you use your mustard seeds, make sure your hands are dry and use a clean, dry spoon to prevent any moisture from getting into the rest of the seeds.
