Place the tofu on several layers of paper towels and press lightly with your hands to remove excess liquid.
2
Preheat the oven to 400 degrees F (204 C) and line a baking sheet with parchment paper.
3
In a mixing bowl, combine sea salt, ground black pepper, crushed red pepper flakes, ground mustard seeds, lightly crushed fennel seeds, smoked paprika, garlic powder, coconut sugar, ground anise, and liquid smoke.
4
Crumble the tofu into the mixing bowl with the spice mixture, using your hands or a fork to mix and create a homogeneous dough.
5
Form the dough into small, evenly-sized balls (pepperoni bites) and place them onto the prepared baking sheet.
6
Lightly spray or brush the pepperoni bites with cooking spray or olive oil to help them crisp.
7
Bake the pepperoni bites in the preheated oven for 25 minutes, or until they are golden brown and slightly dried out.
8
Allow the pepperoni bites to cool and then use as a topping for pizza, calzones, or store in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 1 month.
