Preheat the oven to 400 degrees F. Grease a 9x13-inch casserole dish and set aside.
ZUCCHINI BOATS

Using a spoon or melon baller, hollow out the center of each zucchini half, leaving a 1/4-inch thick zucchini shell. Place them skin side down in the casserole dish.
FILLING

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onions, bell pepper, minced garlic, and minced jalapeno, and cook for 1-2 minutes or until soft.

Add the cooked brown rice, drained black beans, corn kernels, salsa, taco seasoning, and salt to the skillet; cook for another 2-3 minutes.

Turn off the heat and mix in the chopped cilantro.
