Enjoy flavor-packed Spicy Fiesta Bean and Rice Burritos full of colorful vegetables, hearty beans, and spicy salsa. These are perfect to make ahead for a week's worth packed lunches or quick family dinners.
Preheat your oven to 375 degrees and line a baking sheet with foil.
FILLING

In a large skillet over medium heat, add one tablespoon of olive oil. Following this, add diced green bell pepper, red bell pepper, and chopped onion. Cook until the vegetables are softened, for about 10 minutes.

While the vegetables are cooking, in a pan over medium heat, warm the refried beans. Stir in cumin and chili powder for added flavor.
ASSEMBLY

Evenly distribute the seasoned beans over each tortilla, then top with an equal portion of cooked brown rice, sautéed peppers and onions, salsa, and shredded cheddar cheese.

To assemble the burritos, fold in the sides of the tortilla and roll it up. Place them seam-side down on your prepared baking sheet.

Brush the tops of the burritos with the remaining tablespoon of olive oil. Bake for about 15 minutes until the burritos are golden brown and crispy.
