Simplifed Instant Pot Cheesy Spinach Stuffed Shells
Experience the divine meld of creamy ricotta, tender spinach, and melting mozzarella, all encapsulated in pasta shells prepared conveniently in the Instant Pot. This fuss-free recipe reduces some steps on classic stuffed shells dish for easier execution, without sacrificing any flavor.
Place the Instant Pot on SAUTE mode and add the olive oil and spinach. Sauté until the spinach wilts.

In a mixing bowl, combine the wilted spinach, ricotta, 1 cup mozzarella, parmesan, minced garlic, egg, salt, and black pepper. Mix well to form the filling.

Pour the chicken broth into the Instant Pot.

Fill each uncooked shell with the spinach-ricotta mixture and place it in the Instant Pot. Repeat until all shells are filled and stacked in the pot.

Pour the marinara sauce evenly over all of the shells. Make sure that all shells are covered by the liquid.

Secure the lid on the Instant Pot and set the pressure to HIGH for 9 minutes.

Perform a Quick Release immediately after the countdown is over. Remove the lid.

Sprinkle the remaining 1 cup of mozzarella cheese on top of the shells. Replace the lid (without turning the pot on) and let the residual heat melt the cheese for about 3 minutes.
