Preheat the oven to 375 degrees Fahrenheit. Coat a 9 x 13-inch pan with cooking spray.

Cook the jumbo shells pasta according to package instructions until al dente, and then drain.

In a large bowl, mix the cooked shredded chicken, ricotta cheese, 1/2 cup mozzarella cheese, 1/4 cup parmesan cheese, dried Italian seasoning, and salt and pepper to taste.

Spread 1/3 of the store-bought alfredo sauce into the bottom of the prepared pan.

Fill each jumbo shell with the chicken and cheese mixture, and place the shells in a single layer in the pan.

Pour the remaining alfredo sauce over the top of the shells and sprinkle with the remaining 1 cup mozzarella cheese and 3/4 cup parmesan cheese.

Bake, uncovered, for 25 minutes or until pasta is bubbly and cheese has started to brown.

Sprinkle the cooked crumbled bacon, diced tomatoes, and chopped parsley over the top, and serve.
