One-Pan Zesty Lemon Garlic Shrimp with Zoodles and Tomatoes
A delicious, healthy, and easy one-pan dinner featuring tender shrimp cooked with zesty lemon garlic sauce on a bed of zucchini noodles and grape tomatoes. A great weeknight meal that's ready in just 20 minutes!
On a large sheet pan, toss spiralized zucchini noodles and halved grape tomatoes with 1/2 tablespoon of olive oil, 1/2 teaspoon of kosher salt, and 1/8 teaspoon of freshly ground black pepper.

In a medium-size bowl, combine 1/2 tablespoon of olive oil, lemon juice, minced garlic, crushed red pepper, 1/4 teaspoon of kosher salt, 1/8 teaspoon of freshly ground black pepper, and peeled and deveined shrimp.

Add seasoned shrimp to the sheet pan, spreading evenly over the zucchini noodles and tomatoes.

Bake for 8 minutes, until shrimp are cooked through and opaque.

Garnish the pan with sliced lemon and chopped flat-leaf parsley before serving.
