Add the diced white onion, grated ginger, minced garlic, and white parts of the green onions to the pan. Sauté until the onions are translucent, about 3-4 minutes.

Add the ground chicken to the pan, breaking it up into small pieces with a spatula. Season with salt and black pepper. Cook until browned and fully cooked, about 5-6 minutes.

Stir in shredded carrots, coleslaw mix, fresh bean sprouts, low sodium soy sauce, rice wine vinegar, and sriracha. Cook, stirring occasionally, for 3-5 minutes, or until the coleslaw mix is tender.
