Satisfy your family's cravings with this succulent Instant Pot chuck roast, tender potatoes, and savory gravy. This simple, one-pot recipe is perfect for busy weeknights and is sure to please even the pickiest eaters.
Turn on your Instant Pot and set it to 'saute' function.
2
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and smoked paprika.
3
Rub the spice mixture all over the chuck roast, coating all sides.
4
Add vegetable oil to the Instant Pot, wait about 30 seconds, then use tongs to place the roast in the pot. Do not move it for 3-4 minutes until well-seared and browned.
5
Use tongs to turn the roast onto another side for 3-4 minutes, repeating the process until all sides are browned.
6
Switch the Instant Pot to 'pressure cook' on high and set to 70 minutes.
7
Add potatoes, carrots, and onions to the pot, arranging them around the roast. Pour beef broth and Worcestershire sauce over everything.
8
Place the lid on the pot, turn to the locked position, and make sure the vent is set to the sealed position.
9
When the cooking time is up, let the pot naturally release pressure for 10 minutes.
10
After 10 minutes, turn the vent to the venting release position, allowing all steam to vent and the float valve to drop down before removing the lid.
11
Transfer the roast, potatoes, and carrots to a platter and shred the roast with 2 forks into chunks.
GRAVY
12
With the Instant Pot on the 'soup' setting, use a handheld strainer to remove any bits from the remaining broth.
13
Whisk together water and corn starch in a separate bowl.
14
Once the broth is boiling, stir in the corn starch mixture until the gravy thickens. Season to taste with salt, pepper, and garlic powder.
15
Serve the gravy poured over the roast, potatoes, and carrots. Optionally, garnish with fresh thyme or parsley.
