Preheat your oven to 375ºF. Position the top rack in the middle of the oven.

In a large bowl, combine the melted butter, garlic, rosemary, salt, and freshly ground black pepper.

On a large sheet pan, arrange the halved baby gold potatoes, mushrooms, chopped yellow onions, and trimmed green beans.

Drizzle two-thirds of the garlic-rosemary butter mixture over the vegetables. Toss gently to evenly coat them. Season with additional salt and pepper, if needed.

While the vegetables are roasting, pat dry the skirt steak strips, season generously with salt and pepper. Toss them in the remaining garlic-rosemary butter mixture to coat.
