1/2 tsp red pepper flakes
1 tsp black pepper
freshly ground
3 cups baby spinach
15 oz chickpeas
drained and rinsed

Heat olive oil in a large pot over medium heat.

Add diced Onion, cook for about 5 minutes until translucent.

Add minced Garlic and grated Ginger, 2-3 minutes.

Mix in the Turmeric, Garam masala, Cumin and Paprika. Cook until the spices are well toasted, about 2 minutes.

Pour in the Diced Tomatoes along with its juice.

Fold in the chickpeas into the mixture.

Pour in the Coconut milk, stir gently until coconut solids have totally melted and blended into the mixture.

Season the curry with Red pepper flakes and freshly ground Black pepper.

Let it simmer on a low heat for about 15-20 minutes, allowing flavours to meld together.

Add Baby Spinach. Allow it to wilt in the heat of the curry, takes about 2-3 minutes before turning off the heat.
