Boil the tortellini as per the instructions on the package. Do not overcook the pasta, rather undercook it slightly as it will continue to cook in the oven later. Afterwards, drain the tortellini and set aside.

In a separate pan, cook the chopped pancetta over medium heat until crispy.

BECHAMEL SAUCE

In a small saucepan, melt the butter over medium heat. Add the flour to the melted butter and whisk constantly until a smooth paste forms.

Slowly add the milk to the saucepan, while continuously whisking to prevent the formation of lumps.

Stir in the salt, black pepper, and half of the grated Parmesan. Keep the heat on low and stir until the sauce thickens and the cheese has fully melted.

ASSEMBLY

Preheat the oven to 375 degrees Fahrenheit.

In a large bowl, combine the cooked tortellini, crispy pancetta, bechamel sauce, and finely chopped parsley. Mix everything together gently to combine.

Transfer the tortellini mixture to a baking dish and sprinkle with the remaining half cup of grated Parmesan.

Bake in the preheated oven for 10-15 minutes, or until the top is lightly golden and bubbly. Be careful not to overbake or the dish may dry out. Serve hot.
