Preheat the oven to 350°F.

In a large bowl, mix the ground beef with onion powder. Divide the mixture into 6 equal-sized portions and shape into patties. Set aside.

In another large bowl, combine baby Yukon gold potatoes, carrots, red onion, olive oil, garlic powder, salt, black pepper, and smoked paprika. Stir thoroughly to coat the veggies.

Lay a 12x18-inch piece of heavy-duty foil on the counter and spray with cooking spray.

Place 1/6 of the veggies in the middle of the foil, then add a burger patty on top. Close the foil around the ingredients to form a pouch. Repeat this process for the remaining 5 portions.

Place the foil packs on sheet trays and bake for 45 minutes, or until the veggies are tender and the burger patties reach at least 160°F.

Carefully open the foil packs and place a slice of Colby jack cheese on top of each burger patty. Loosely cover with foil again and let sit for about 5 minutes, until the cheese has melted. Serve.
