Set a wire rack over a baking sheet lined with paper towels. Preheat your oven to 400 degrees Fahrenheit.
PREPARATION

Place the thawed riced cauliflower in a clean tea towel or cheesecloth, roll it up and squeeze to wring out any excess moisture.

Transfer the dry cauliflower to a large bowl. Mix in the cheddar cheese, almond flour, garlic powder, beaten eggs, the white light parts of scallions, sea salt and freshly ground pepper.
BAKING

Line a baking sheet with parchment paper and lightly coat with the olive oil.

Scoop out a 1/4 cup of the cauliflower mixture onto the baking sheet and flatten with a spatula to form a 3-inch patty. Repeat this with the remaining cauliflower mixture.

Bake the fritters in the preheated oven until bottoms are crispy and deep golden brown, about 15-20 minutes. Flip carefully to bake the other side.
